Clinical Nutrition Services
Consultants are available to :
Complete resident assessments and documentation
Actively participate in the interdisciplinary care plan process, and attend risk meetings
Monitor and assess enteral nutrition feeding protocol and make recommendations
Ensure the admission, quarterly, and annual resident assessments are completed and compliant with state and federal regulations
Assist in therapeutic diet education with resident, family, and staff as needed
Complete a match-back process for diet orders and enteral nutrition feeding orders
Conducts audits of MDS to assure PDPM guidelines are met
Complete any off site consults within 24 hours of request
Food Service Operations

Consultants are available to:

Conduct monthly inspections for kitchen safety and sanitation compliance with facility, state and federal guidelines

Evaluate the food production efficiency and tray line assembly accuracy

Evaluate the overall dining program and implement resident centered meal delivery
-
Monitor for menu compliance
-
Assist in the menu planning process
-
Train food service managers in ordering/receiving process, inventory control, and program management goals
-
Provide tools to food service team to improve resident satisfaction
Educational Services
Consultants are available to:

Serve as a preceptor with the CDM/CFPP program
-
Proctor the ServSafe program
-
Assist local students seeking a preceptor for distance learning in an approved AND program
-
Perform in-services for the food and nutrition staff as needed.

Monitor trends from OLTC at both state/federal levels and keep facilities informed of changes to practices, rules and regulations
